Ingredients for Cheese Aigrettes Recipe

  • 1/2 cup flour
  • 1/2 cup water
  • 2 eggs
  • 4 tablespoons grated cheese
  • Salt, pepper, and paprika to taste
  • Vegetable shortening

Instructions

  1. Bring 2 tablespoons vegetable shortening and 1/2 cup water to boiling point, then add 1/2 cup flour and stir until mixture leaves sides of pan.
  2. Cool, but do not allow to become cold, then add 2 eggs, 1 by 1, 4 tablespoons grated cheese, salt, pepper, and paprika to taste and beat well.
  3. Allow to stand in cool place 30 minutes.
  4. Drop by teaspoons into hot vegetable shortening and fry a golden brown.
  5. Drain and sprinkle with grated cheese.
  6. Serve hot.
  7. The vegetable shortening should not be too hot or the cheese will burn.
