Ingredients for Califlower Tomato Souffle Recipe
- 3 tablespoons vegetable shortening
- 2 tablespoons flour
- 1 cup milk
- 1/2 cup grated cheese
- 2 egg yolks
- 2 egg whites, stiffly beaten
- 2 tablespoons chopped parsley
- Salt, pepper, and cayenne pepper to taste
- Cooked califlower pieces
- Seasoned tomatoes
- Bread crumbs

Instructions
- In a saucepan, melt vegetable shortening and add flour.
- Add milk, heat to boil.
- Reduce heat then add cheese, egg yolks, chopped parsley, and seasonings.
- Cook until sauce thickens.
- Remove from heat and fold in beaten egg whites.
- Put cauliflower into buttered mold, then add slices of seasoned tomatoes.
- Pour in sauce, sprinkle on few crumbs and bake until firm.
- Garnish with watercress and serve immediately.
