Ingredients for Califlower Tomato Souffle Recipe

  • 3 tablespoons vegetable shortening
  • 2 tablespoons flour
  • 1 cup milk
  • 1/2 cup grated cheese
  • 2 egg yolks
  • 2 egg whites, stiffly beaten
  • 2 tablespoons chopped parsley
  • Salt, pepper, and cayenne pepper to taste
  • Cooked califlower pieces
  • Seasoned tomatoes
  • Bread crumbs

Instructions

  1. In a saucepan, melt vegetable shortening and add flour.
  2. Add milk, heat to boil.
  3. Reduce heat then add cheese, egg yolks, chopped parsley, and seasonings.
  4. Cook until sauce thickens.
  5. Remove from heat and fold in beaten egg whites.
  6. Put cauliflower into buttered mold, then add slices of seasoned tomatoes.
  7. Pour in sauce, sprinkle on few crumbs and bake until firm.
  8. Garnish with watercress and serve immediately.
