Turnips are love 'em or hate 'em vegetables. If you were forced to eat turnips as a child and therefore avoid them today, you might want to try them again. I found an affinity for turnips in adulthood after an entire childhood of loathing them.

Turnips are not only eaten for the large root, but for the above-ground leaves, or 'greens'. The greens are usually harvested before the root, since they are fragile and wilt readily. Use turnip greens as you would kale or spinach, in salads or boiled until limp and flavored with bacon, onion or vinegar.

Healthy Turnips

The turnip root is full of vitamin C, usually associated with citruses, and turnip juice has more of this vitamin that an equivalent amount of orange juice.

The greens are a source of significant amounts of vitamin A and vitamin K, both considered powerful antioxidants offering some protection against developing cancer.

Cooking Considerations

Turnips have a cooked texture similar to carrots, but a distinctive tangy taste. They are at their best in rich meaty stews with strong flavored meat such as beef or oxtail. As a side dish, pair them with mild veggies such as potatoes.

Turnips can also be eaten raw. Wash and peel, then slice thinly to eat with or without a dip.

Because they are low in calories, turnips can take the place of starchier vegetables, such as potatoes, in a dieter's menu. Use an artificial butter-flavored powder such as 'Butter Buds' to provide a buttery look and taste for meal appeal.
