A Shrimp Recipe for all Seasons
As the quote above illustrates, there's a shrimp dish for everyone, except the poor unfortunates who are allergic to shellfish.
Almost everyone has a favorite way of preparing or eating this seafood: the spiced steamed shrimp that arrive at your table with the shells on that you have to peel before you can eat, the lightly battered and fried popcorn variety that you dip in cocktail sauce and eat by the handful, Louis, cocktail,bouillabaisse...
Shrimp are found in a wide variety of sizes, from the tiny "salad" variety to the delightfully oxymoronic 'jumbo shrimp'. The larger they are, the more expensive they are by the pound, which is a reflection of how easy they are to clean. A pound of tiny ones takes a lot of picking and poking to make them edible, while their giant cousins can take just a few moments to clean enough for a meal.
Is it a Shrimp or a Prawn?
While scientifically a shrimp and a prawn are different species of animal, for dining purposes, it depends on where you are and the size of the seafood. For instance, in Britain and Europe, edible shrimp are called prawns, whether they actually are prawns or not, and in fact, they are mostly shrimp. In the U.S., shrimp and prawns are called shrimp. The exception to the rule in the U.S. is that very large shrimp (one to two pieces constituting a serving) are often called prawns on restaurant menus. Are they prawns or are they shrimp? I have no idea.
