Shortcake
Shortcake is a classic summer treat, most frequently associated with strawberries. A southern tradition, shortcake recipes can be a number of things: a sweet biscuit, sponge cake, pound cake, angel food cake, or other bread pastry. The shortcake is the actual biscuit itself, but many people prefer other types of cake to form the base for these sweet desserts.
Shortcakes first became popular in the mid-1800s, and today they are made with a number of sweet, juicy fruits, including blueberries, raspberries, or peaches. Small cakes or slices may be used for individual desserts, or the treat may be prepared with an entire cake or in a large serving bowl for a group of people.
Tips
Shortcake recipes vary in difficulty depending on whether or not you prepare the cake or biscuit yourself. Store-bought varieties are suitable for some individuals, while other people feel the best shortcakes are entirely homemade. Regardless of your preference, the cake part of the dessert should always be broken up during preparation to allow more fruit juices to seep into it, and using a syrup-based or juicy fruit is the key to a delectable shortcake (mixing the fruit with sugar and letting it sit for a short period of time will draw out the natural syrup). The cake may be arranged in layers or just at the bottom of the dessert, depending on how it is to be presented. Frozen fruit can easily be used in most of these recipes if fresh fruit is not available, allowing this dessert to be more than just a seasonal favorite. Shortcakes can be garnished with whipped cream, ice cream, nuts, toasted coconut, mint leaves, or whole or sliced fruit for added elegance and deliciousness.
