Scrambled Eggs

They’re a common breakfast dish, but scrambled eggs are anything but common. Easy to make, versatile, and healthy, there is no limit to the creations a good chef can formulate with scrambled eggs.

The basic recipe uses a small pan coated with a bit of butter or nonstick spray for easier turning. Eggs should be cooked thoroughly, though some people prefer softer, moister eggs while others prefer harder eggs that have been cooked longer. Scrambled eggs can be easily overcooked and may become rubbery or turn green. Adding liquid, typically a tablespoon of milk or water, helps keep eggs moist. To keep eggs warm without overcooking, remove them from the heat, cover them to preserve moisture, and place them over a slightly larger pan of hot water.

The longer eggs are whipped before cooking, the more consistent the color and texture will be. Eggs may be scrambled prior to being added to the pan or broken directly into the pan. Because they begin to cook immediately, it is best to whip the eggs first if additional ingredients will be added.

For healthier scrambled eggs, use egg whites rather than whole eggs since the cholesterol is almost exclusively in the yolk. It is not necessary to add much grease or oil to help them cook since adding too much additional fat will decrease the health benefits of the dish.

Spicing Up Your Scrambled Eggs

The mild flavor of scrambled eggs is easily enhanced by mix-in ingredients. Popular choices include:

  • Cheese or cream cheese
  • Sour cream
  • Vegetables, especially peppers, tomatoes, onions, spinach, or mushrooms
  • Meats such as bacon, ham, or seafood
  • Dry or liquid spices: pepper, garlic, Worcestershire sauce, or blended seasonings
  • Pasta or grain for added bulk and texture
  • Salsa, pesto sauce, or chutney

When adding additional ingredients, heat them slightly first to ensure they are fully cooked since eggs cook so quickly. With care, simple scrambled eggs can become an intricate dish of widely varied tastes to make any breakfast or brunch a sensational experience.
