Peanut Butter
A staple of elementary school lunchboxes, peanut butter is not only a snack, but also a key ingredient in many main dish recipes. Peanuts have been used throughout the world in a variety of recipes for centuries, including African stews, Chinese sauces, and even Civil War porridge. The true origin of peanut butter is somewhat uncertain, though several different developers claim to have created similar “nut paste” recipes around the turn of the twentieth century. It is generally believed that creamy peanut butter was developed first, then the innovation of adding additional crushed peanuts to the finished butter resulted in the first crunchy spread.
Nut butter is substantially nutritious and serves as an admirable protein for vegetarians and individuals who either do not care for or are unable to eat meat. While a serving of processed peanut butter may have a substantial number of calories, it also provides fiber, protein, and iron. Certain types may also be enriched with additional vitamins and minerals.
Types
Peanut butter comes in a wide range of varieties. If a recipe calls for a specific type, it is best to adhere to the recommendation, since different types may react to preparation methods in different ways. Peanut butter becomes more fluid as it is heated, causing it to spread quickly. Generally, the wackier varieties – jars that include built-in jelly, honey or swirls of chocolate, for example – should be avoided for most recipes.
Americans eat nearly three pounds of peanut butter apiece annually. Whether you prefer a classic p.b. and jelly sandwich or a more gourmet creation, it is a traditional favorite for snacks, desserts, and main dishes alike.
