Muffin Recipes
Food historians believe the word muffin comes from the French "moufflet," which means "soft bread." The first muffin recipes appeared in the 18th century, although it's clear they were derived from other bread-like recipes. These early versions were made from leftover bread dough, but they have evolved into tasty treats that are especially popular as a quick breakfast bite.
Today, most muffins grace the breakfast table, but savory ones also can be an accompaniment to dinner. A nice piping hot corn variety is the perfect pairing with a bowl of steaming hot chili or soup! You can add herbs, cheese, nuts, and dried fruit to give a kick of extra flavor.

Cooking Tips
- Don't beat batter too much. It's supposed to be lumpy!
- You can freeze them for up to three months. They'll last in the fridge for about four days.
- Try a silicone pan for baking. They come in many different designs and your muffins will literally fall out of the pan when they are done. No sticking whatsoever!
- Substitute buttermilk for milk in your recipe for an added tasty tang.
