The Season of Garden Recipes

Supermarket shoppers have become spoiled by the year-round availability of produce that has been brought in from Chili or Venezuela, but gardeners are more attuned to the cycles of the seasons and know when certain plants are ripe and ready for eating in their climate.

For instance, garden recipes like corn on the cob before the Fourth of July means that you got your corn planted really early - good for you. Corn is typically a 'hot summer' vegetable in most of the US.

Leaf Lettuce - a Sign of Spring

One of the earliest vegetables available for garden recipes is leaf lettuce. This is lettuce that doesn't form a head and it can be eaten almost as soon as it appears, although you may want to let it get to a reasonable size just so there's more of it. Don't pull it, but cut it off above the ground - this allows more leaves to sprout and you can eat from the same plant for several weeks.

When Mom started serving wilted lettuce at dinner, I always knew spring was really here. Fry some bacon until crispy and crumble the slices. Then add vinegar, sugar and lemon juice to the hot bacon oil and heat it. Add sliced spring onions if desired. Toss this dressing with a large quantity of leaf lettuce. The lettuce will shrivel under the heat of the dressing, so pick 3-4 times as much lettuce as you think you will need.
