What are Fritters?
A fritter recipe is simply created from a piece of food that has been dipped in batter and fried, though a more liberal definition may include a crumb coating or sautéing. The most popular types are fruit-based (apple is the most popular, followed by banana, raspberry, and other fruits), though many different cultures and recipes may create vegetable, meat, or seafood varieties. Technically, tempura fried foods also fall into this food category. The most well-known types are deep-fried cakes or hole-less doughnuts with a thin glaze of icing.
Fritter recipes may have given rise to another popular fried food: French fries. Originally made as potato fritters, chefs soon discovered that potatoes contain enough natural starch to create the customary crispy coating when fried without the addition of batter.
Because of their richness and general lack of compelling nutritional qualities, these treats are often a traditional carnival binge food prior to the fast of Lent, or they are often reserved for desserts or celebratory treats rather than common foods.
Cooking Tips for Fritter Recipes
Ideally, the taste of the fruit or other filling should be the dominate flavor rather than the taste of the batter. Because they require deep-frying, fritter recipes should be thoroughly drained before serving to avoid a too-greasy and unappetizing dish. If the food inside is uncooked, the oil may have been too hot or the coating too thick. Conversely, if the coating is too thin or uneven, the food may be overcooked or the batter could float off the bits of food. To properly adhere the coating, the fruit or other type of food should be dry before dipping.
With a bit of care, it is easy to make homemade fritters that are a rich and decadent treat, suitable for breakfast, dinner, dessert, or just as a wicked snack.
