Fried Baked Goods

From fritters and tart crusts to donuts, small pies, and other treats, some desserts are best fried. Frying is one of the oldest methods of cooking, and baked goods can be either pan fried or deep fried. This cooking technique creates a crisp crust while keeping the interior filling soft and tender without overcooking, though if the treats are not fried properly, the results can be disastrous.

Tips for Fried Treats

While frying is a basic cooking method, applying it to baked goods can be tricky and a flawed approach can destroy an otherwise delicious dessert. For the best fried baked goods…

  • Heat the oil to the temperature specified in the recipe – oil that is too cool or too hot will alter the cooking time and may adversely affect interior ingredients.
  • Clean oil (without debris) can be reused, but only for the same recipe – oil holds flavors and will taint different recipes with previous tastes.
  • Prepare batter (if used) accurately – thick batter will clump and obscure the filling, while thin batter may not adhere properly.
  • Drain items thoroughly to avoid too much fat and added calories from the frying oil. If the treats have crevices or grooves, rotate them while draining or pat with paper towels to remove excess fat.
  • Add powdered coatings while hot so they stick well – powdered sugar, cinnamon sugar, and dry seasonings are popular choices.
  • Add icing or glaze after the treat has cooled slightly to help it adhere – if the fried treat is hot, the coating will slide off. Chocolate drizzle, vanilla glaze, and icings with complimentary flavors are favorite additions.
  • Cooled treats can be quickly reheated in the microwave or by dipping briefly in hot oil. If additional oil is used, the food will need to be redrained and any toppings must be reapplied (oil reheating is not recommended for powdery coatings).
