About Cornbread
Mmmmmm...what could taste better on a cold winter night than a bowl full of chili and a big square of cornbread? Cornbread is a traditional Southern bread, and there are as many recipes for it as there are great cooks in the South! Actually, cornbread has a long history in North America. Native Americans ground corn centuries ago and mixed it with water and/or eggs to create a dense, flat bread that traveled well and lasted a long time. Modern flavorings and the addition of buttermilk, seasonings, and leavening made the bread lighter and more flavorful.
Cornbread doesn't have to be square, either. Corn muffins, skillets, and loaves make the bread more versatile and appealing. Similarly, adding different ingredients like apples and hot peppers makes it versatile and appealing as well.
Tips
Most cooks use buttermilk in their cornbread to give it a zesty zing and to add more texture. If your recipe calls for milk, try adding buttermilk instead and see what a difference it makes. In addition, most Southern cooks wouldn't consider making their cornbread in anything else than a seasoned cast iron skillet. Try using stone ground cornmeal for your next batch rather than the self-rising types available at most grocery stores. You can find stone ground cornmeal in most natural or health food departments of stores. One more thing: Southern cooks wouldn't dream of adding sugar to their cornbread! So if your recipe calls for sugar or other sweetener, it's not the real Southern-style corn bread.
