Cold soup recipes may not be the first thing you think of when planning a summer menu. However, when you're outdoors gardening, playing, or just sitting by the pool, it becomes obvious that the much-vaunted 'hot meal' is greatly over-rated.
But just because it's hot outside doesn't mean you can't still have soup. Who wants to steam up their kitchen (and themselves) cooking when there are plenty of good cold foods to serve. And, most of them are every bit as nutritious (and often more) than cooked foods!
In fact, experts claim that the less processed a food is, the more nutrition it has to impart. A fresh peach or apple certainly is better for you than that slab of pie, however good the pie may be. Of course, many cold soup recipes are cooked and then chilled, while others spend their whole lives cool. Keep in mind that some cold soup recipes are meant to be appetizers, others are hearty enough to stand as entrees, while still others can be side dishes or desserts.
Preparing Cold Soup Recipes
Like their hot counterparts, most cold soup recipes are fairly easy to prepare, which makes them well suited to the heat of the summer, too. If you use your food processor for the chopping, you can have your soup together in a flash.
Make up borscht or vichyssoise in the cool of the evening to serve cold the next day. Borscht is a traditional Russian beet soup, made by simmering diced beets in beef stock until cooked, yet not mushy. Season with sugar and vinegar for a slightly tangy flavor and serve cold with a dollop of sour cream on top. In the winter, it's great hot, too.
Another favorite cold soup recipe is the Spanish style gazpacho. Most gazpacho recipes combine broth, pureed tomatoes (or tomato sauce) with fresh, chopped vegetables: a perfect way to use up the products of your July garden. .
