Celery has long been beloved of dieters because it has 'negative calories' - that is, the amount of calories in the celery is less than the number of calories used to digest it. In theory, you could eat only celery and be taking in a negative number of calories every day.
Do not do this! There are not enough nutrients in celery alone to support body functions.
That said, adding celery to your diet adds bulk and fiber, and can fill you up in place of more caloric foods.
Uses of Celery
Celery is used raw in salads and appetizers. The stalks with their half-cylinder shape are just right for filling with an interesting stuffing for finger food. Cream cheese, peanut butter, hummus - all suitable for filling a celery stalk. If calories are an issue, make a low-fat filling with non-fat yogurt, cucumber diced tiny, and sesame seeds.
Celery is always great in soups, such as vegetable beef or chicken noodle soup. And of course it's the main attraction in celery soup, creamed or clear, which can be made with beef, chicken or turkey stocks.
Dice celery fine and add to tuna or chicken salads for crunch. Or boil to practically mush to add to poultry stuffing with sage and onion.
Celery Seed
Celery seeds are a great spice to add to dishes. The seeds have a concentrated celery flavor that can jazz up rice pilafs or noodle dishes. You can find celery seed in the herb and spices rack at the grocery, either whole or ground.
