Casseroles began as a kind of stew - a method of slow-cooking meat with vegetables in the oven so that tougher cuts of meat became tender and easier to eat. Serving a dish en casserole means serving it in the pan it cooked in, and several companies have made their fortune providing attractive 'oven-to-dinner-table' cookware. The term for the cookware is the same as for what is cooked therein - it too is called a 'casserole' pan and you should have at least one in your kitchen.
