Burger History
Like many popular foods, burger recipes have a lengthy history with unclear origins. The first ones were likely served around the beginning of the twentieth century and the first fast food hamburgers were distributed by White Castle restaurants in 1921. This food evolved rapidly with the first cheeseburger served in 1924, double burgers introduced in the late 1930s, and the first McDonald’s burger appearing on the scene in the late 1940s. Today, Americans eat an average of three burgers each week.
Popular throughout the world, burger recipes vary greatly by region. In the United Kingdom, hamburgers are called “beefburgers” (a more appropriate term considering they don’t typically contain any ham). Most countries do have a version of burgers that's similar to the style of the United States, it's the toppings and condiments that vary the most. In Hawaii, for example, burgers may be accompanied by sliced pineapple while in Mexico they’re often served with peppers.
In recent years, this favorite has continued to adapt to changing dietary trends. Ground turkey, fish, chicken, buffalo, and ostrich are all healthier variations, as is the veggie burger that contains no meat at all – ground vegetables create the characteristic patty. Low-carb versions are also available where the meat is wrapped in lettuce rather than a bun.
Tips for Your Burger Recipes
Fresh ground meat goes through color changes during its shelf life, but avoid and immediately discard meat that has severely uneven coloration or a greenish tint. Burgers may be fried, grilled, or even baked. To preserve the juiciness of the meat, avoid pressing the patties frequently and consider adding a tablespoon of vegetable oil, some vegetable juice, or liquid spices to the mixture, particularly if using leaner types of ground meat. Over-mixing creates dense patties and you might consider wetting your hands to keep the mixture from sticking to them. Different ingredients are often found in burger recipes to create different flavor. Onion soup mix, spices, bits of ham or bacon, salsa, and minced vegetables all add a different spin on the classic. For topping alternatives, consider peppers, sautéed mushrooms, guacamole, barbeque sauce, chili, and salsa for more exotic burger recipes.
