Beans have a reputation for their unfortunately funny side effects, but there is nothing funny about how nutritious these pint-sized vegetables are. Beans are high in fiber, something that most Americans lack in their diet, but they make such a nice addition to soups that there's no reason to miss out on their benefits.
Another great thing about beans is that they come in a wide variety--navy, black, kidney, lima, lentil...there's almost no end to taste and texture of beans. Beans are also a staple in Spanish and Italian foods, so these soups are a great compliment to theme dinners you may be planning.
