Apples recipes are very versatile. They can appear during dinner as a salad or as flavoring for the entree. And, of course, a dessert dish. Deep dish apple pie a la mode... mmmmmmm.
For eating 'out of hand' or to dice for a salad, select crisp-fleshed fruit. Many baking apple varieties are too mushy to be enjoyed raw in a salad, so pay close attention to the variety called for in your apple recipes. The best variety of apple is very much a personal taste. Some people like the tartness of the Granny Smith, while others prefer the sweetness of the Fuji. Buy a few of each at your grocery store and try them all - you may be overlooking a new personal favorite.
Cooked Apple Recipes
Buttered baked apples make excellent individual portion desserts on a cold winter day. They are delicious when spiced with cinnamon or a little flavored brandy.
Applesauce makes a good companion to pork dishes. You can serve the sauce beside pork chops on the plate or bake the pork with apple slices, covering it to send fruity flavor into the meat.
Applesauce versus Apple Butter
Ironically, there is no butter in apple butter. The name comes from the texture, which is creamier and smoother than applesauce, from which it is made. The butter is made by cooking down applesauce to reduce the amount of moisture, and then flavoring it with spices and sugar or molasses.
Apple butter has a stronger flavor than applesauce and is used as a meat topping or spread on bread or pastry as a breakfast dish in some apple recipes.
