[edit]
Instructions
- Butter the inside of a granite saucepan, add two ounces of unsweetened chocolate and melt over hot water; add two cups of light brown sugar and mix well; then add an ounce of butter and half a cup of rich milk.
- Cook until the mixture forms a soft ball when tested in cold water, then take from the fire and flavor with vanilla.
- Put into a sauceboat and pour while hot over each service of ice cream.
- If there is delay in serving, keep hot by standing in a vessel of hot water.
- As this simple dressing is poured over the cold cream it immediately hardens, forming a caramel coating.
