Ingredients for Cantaloupe Cream Soup

  • 2 cantaloupes, peeled, seeded, chopped
  • 2 tablespoons butter
  • Seasonings to taste
  • 6 cups thick white sauce
  • (To make White Sauce: scald 1 pint of milk. Melt 3 tablespoons of butter in a saucepan. Add half a teaspoon of salt, 4 tablespoons of flour, and let cook for one minute, stirring constantly. Add the milk little by little, stirring gently until it boils. Let it boil for 3 minutes.)

Instructions

  1. Make the white sauce, then add cantaloupes, butter, and seasonings.
  2. Let it cook for about 20 minutes.
  3. Pass through large strainer.
  4. Then serve.
