Ingredients for Calf's Head, Vinaigrette
- 1 or½ calf's head
- French dressing

Instructions
- Vinaigrette Recipe, Boil the calf's head in salted water.
- Put a towel in the water on top of the calf's head.
- This will keep the calf's head white.
- Let cook slowly until the calf's head is cooked.
- This requires about 40 to 45 minutes.
- Remove from water.
- Remove flesh from bones and cut in large pieces.
- Serve with French dressing.
- Vinaigrette is the French term used for French dressing.
