Butterscotch Sundae Recipe

Instructions

  1. Serve Butterscotch Parfait in glass with Butterscotch Sauce and sprinkle with Chopped Nuts.
  2. Butterscotch Parfait Recipe:
  3. Put in saucepan 1/3 cup brown sugar, add 1 tablespoon butter, stir until melted and boil one minute.
  4. Add 1/4 cup water and again stir and cook until butterscotch is melted.
  5. Beat 2 egg yolks in top of small double boiler until very light, add Syrup gradually and beat and cook over hot water until very light and fluffy.
  6. Put in refrigerator pan and chill.
  7. Beat 1/2 pint cream until stiff, add a Few grains salt and 1-1/2 teaspoons vanilla and beat in Egg mixture with a few turns of the egg beater.
  8. Put in refrigerator pan and freeze.
  9. Maple Parfait
  10. Make the Butterscotch Parfait using 1/4 cup maple syrup in place of brown sugar and water.
  11. After cooking with egg yolks pour over 2 egg whites beaten stiff and finish as above.
  12. Butterscotch Sauce Recipe:
  13. 1 cup corn syrup
  14. 1/2 cup granulated sugar
  15. 1 tablespoon top milk
  16. 1 tablespoon butter
  17. Few grains salt
  18. 1/2 teaspoon vanilla
  19. Combine all the ingredients except the vanilla, and boil until it forms a short thread, 238 degrees F., then add two tablespoons boiling water and the vanilla.
  20. Use hot or cold.
