Ingredients for Butterscotch Cookie Recipe

  • 1 cup hard butter or margarine, softened
  • 2 cups packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla
  • 3 cups flour
  • 1 teaspoon baking soda
  • 1 cup chopped walnuts

Instructions

  1. In a large mixing bowl, beat the butter and brown sugar until creamy.
  2. Beat in 1 egg until smooth, then repeat with other egg.
  3. Beat in vanilla .
  4. In a separate mixing bowl, stir together the baking soda and flour.
  5. Mix in 1 cup of the butter mixture at a time, beating to fully incorporate the flour.
  6. Repeat until both the butter and flour are combined.
  7. Stir in walnuts, then separate into 4 sections.
  8. Roll each into a 1 1/2-inch thick tube, wrap in wax paper, then chill for six hours.
  9. Preheat oven to 350.
  10. Remove paper and slice dough into 1/4-inch thick cookies.
  11. Bake for 8-10 minutes or until golden brown.
