Ingredients for Butterscotch Cookie Recipe
- 1 cup hard butter or margarine, softened
- 2 cups packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla
- 3 cups flour
- 1 teaspoon baking soda
- 1 cup chopped walnuts
Instructions
- In a large mixing bowl, beat the butter and brown sugar until creamy.
- Beat in 1 egg until smooth, then repeat with other egg.
- Beat in vanilla .
- In a separate mixing bowl, stir together the baking soda and flour.
- Mix in 1 cup of the butter mixture at a time, beating to fully incorporate the flour.
- Repeat until both the butter and flour are combined.
- Stir in walnuts, then separate into 4 sections.
- Roll each into a 1 1/2-inch thick tube, wrap in wax paper, then chill for six hours.
- Preheat oven to 350.
- Remove paper and slice dough into 1/4-inch thick cookies.
- Bake for 8-10 minutes or until golden brown.
