Ingredients for Browned Cornmeal Mush Recipe 1

  • 3 cups hot cornmeal mush
  • 1/4 cup cold water
  • 1 egg
  • Corn oil
  • Corn syrup
  • Fine dry bread crumbs

Instructions

  1. Pour the hot mush into a small, deep pan that has been rinsed with cold water.
  2. When mush has cooled, cut it in slices, then in halves.
  3. Dip each piece in the bread crumbs.
  4. Slightly beat the egg with 1/4 cup cold water.
  5. Dip the slices in the egg, then in the crumbs again.
  6. In the meantime, heat enough corn oil in a deep fat frying kettle to fill it halfway.
  7. Put the slices in the frying basket and fry until golden brown.
  8. Drain on crumpled paper and serve as a vegetable or as a breakfast or luncheon dish with corn syrup.
