Brown Rice Pudding

Ingredients for Brown Rice Pudding Recipe

  • 4 cups brown rice, cooked
  • 1/2 c. honey
  • 1 c. dry white wine
  • 1/2 tsp. vanilla extract
  • 1/4 tsp. ground cinnamon
  • 1 cup raisins
  • 4 lg. eggs, beaten

Instructions

  1. Preheat oven to 325 degrees.
  2. In a saucepan, stir together the wine, honey, vanilla, and cinnamon. Heat to medium and continue stirring.
  3. Cook until honey is dissolved.
  4. Bring to a boil and add raisins.
  5. Meanwhile, place the rice and eggs in a bowl and stir together.
  6. Once saucepan comes to a boil, remove from heat and add the contents to the rice.
  7. Stir well.
  8. Pour into a prepared casserole dish and bake for 45 minutes.
