Brown Rice Pudding

Ingredients for Brown Rice Pudding Recipe
- 4 cups brown rice, cooked
- 1/2 c. honey
- 1 c. dry white wine
- 1/2 tsp. vanilla extract
- 1/4 tsp. ground cinnamon
- 1 cup raisins
- 4 lg. eggs, beaten
Instructions
- Preheat oven to 325 degrees.
- In a saucepan, stir together the wine, honey, vanilla, and cinnamon. Heat to medium and continue stirring.
- Cook until honey is dissolved.
- Bring to a boil and add raisins.
- Meanwhile, place the rice and eggs in a bowl and stir together.
- Once saucepan comes to a boil, remove from heat and add the contents to the rice.
- Stir well.
- Pour into a prepared casserole dish and bake for 45 minutes.
