Instructions

  1. This underlay is a decidedly unique feature.
  2. Beat the whites of six eggs to a stiff froth.
  3. Work two pounds of almonds which have been blanched and pounded in a mortar, with rosewater to a stiff paste.
  4. Mix the almond paste and egg whites together and add by degrees two pounds of pounded loaf sugar (confectioner's sugar may be substituted).
  5. When the cake is done spread the icing smoothly over it and place in a cool oven to brown.
