Instructions
- This underlay is a decidedly unique feature.
- Beat the whites of six eggs to a stiff froth.
- Work two pounds of almonds which have been blanched and pounded in a mortar, with rosewater to a stiff paste.
- Mix the almond paste and egg whites together and add by degrees two pounds of pounded loaf sugar (confectioner's sugar may be substituted).
- When the cake is done spread the icing smoothly over it and place in a cool oven to brown.
