Ingredients for Brown Fricassee Of Chicken Recipe
- 1 whole chicken, including innards
- 4 tablespoons butter, melted
- 2 tablespoons flour
- 1 pint boiling water
- 1 teaspoon salt
- Parsley
- 1 teaspoon onion juice
- Black pepper to taste

Instructions
- Draw, singe, and joint chicken. Put innards aside.
- Brown chicken in butter in a saucepan.
- Add 2 tablespoons flour to the saucepan, and add 1 pint boiling water or stock. Stir over medium heat until it boils; add 1 teaspoon of salt.
- Cover, and let simmer gently until tender, then add 1 teaspoon onion juice and black pepper to taste.
- Put neck-piece, heart, liver, gizzard, and back pieces in center of dish; put 2 pieces of breast on top, second joints on one side of plate, legs crossed on other, and wing at each end of plate.
- Pour sauce over chicken, sprinkle with chopped parsley, and serve.
