Ingredients for Bread Fried For Soup Recipe
- 1 or 2 slices of stale bread, 1/4 inch thick
- Frying oil
Instructions
- Remove the crust and cut the bread into small cubes not more than a 1/4 inch square.
- Half fill an iron saucepan with frying oil and let boil. This happens when it is still and a blue smoke rises from it.
- Put the bread cubes, a few at a time, into a frying basket and plunge them into the fat. Shake them about until they are a golden brown color.
- Turn them onto kitchen paper to free them from grease. Take another spoonful and proceed as before, until a sufficient quantity of croutons are fried.
- Put the fried bread croutons upon a dish covered with a napkin and serve with the soup.
- Sometimes the fried bread croutons are put into the soup tureen and the soup is poured over them.
- The bread can also be cut in diamond shapes and prepared as above to use for garnishing.
