Instructions

  1. Small pastry shells or cases filled with creamed meat or game are called bouchees, and are much in vogue for entrees.
  2. They provide an excellent way of utilizing leftovers of chicken, sweetbreads, fish.
  3. Paper cases, bought at the confectioner's, may be used instead of the pastry shells.
