Ingredients for Black Bean Soup Recipe
- 1 pint of beans
- Cold water, enough to cover beans
- 2 quarts of cold water
- 1 white onion
- 8 whole cloves
- 2 bay leaves
- 1/2 teaspoon powdered cinnamon
- 1 teaspoon white pepper
- 1 teaspoon salt
- A stalk of minced celery
- 1 tablespoon butter
- Hot water
- 2 hard boiled eggs, diced
- 1 teaspoon Worcestershire sauce
- A little grated lemon peel
- Dash of nutmeg

Instructions
- Soak beans in cold water overnight. The next morning, cover them with fresh water, bring to the boiling point, and drain.
- Add two quarts of cold water and simmer gently for one hour.
- Stick the cloves in the white onion stuck.
- Stir onion, bay leaves, cinnamon, white pepper, salt, and celery into the simmering soup and cook for another hour.
- Press through a colander, add butter, and return to the heat, diluting with a little hot water if too thick.
- Add hard boiled eggs, Worcestershire sauce, a bit of grated lemon peel to taste, and a dusting of nutmeg.
- Serve with browned croutons.
