Ingredients for Black Bean Soup Recipe

  • 1 pint of beans
  • Cold water, enough to cover beans
  • 2 quarts of cold water
  • 1 white onion
  • 8 whole cloves
  • 2 bay leaves
  • 1/2 teaspoon powdered cinnamon
  • 1 teaspoon white pepper
  • 1 teaspoon salt
  • A stalk of minced celery
  • 1 tablespoon butter
  • Hot water
  • 2 hard boiled eggs, diced
  • 1 teaspoon Worcestershire sauce
  • A little grated lemon peel
  • Dash of nutmeg

Instructions

  1. Soak beans in cold water overnight. The next morning, cover them with fresh water, bring to the boiling point, and drain.
  2. Add two quarts of cold water and simmer gently for one hour.
  3. Stick the cloves in the white onion stuck.
  4. Stir onion, bay leaves, cinnamon, white pepper, salt, and celery into the simmering soup and cook for another hour.
  5. Press through a colander, add butter, and return to the heat, diluting with a little hot water if too thick.
  6. Add hard boiled eggs, Worcestershire sauce, a bit of grated lemon peel to taste, and a dusting of nutmeg.
  7. Serve with browned croutons.
