Ingredients for Bisquick Muffins Recipe
- 2 cups Bisquick mix
- 1 1/4 cups milk
- 2 eggs
- 1/4 cup rice flour
- 1/4 cup tapioca flour
- 1/2 cup sugar
- 1 tsp baking powder
- 1 tsp xanthan gum
- 1 cup fresh or frozen blueberries

Instructions
- Preheat oven to 350 degrees.
- In a medium mixing bowl, stir together the Bisquick mix, milk, and eggs until a batter is formed.
- Add flours, sugar, xanthan gum, and baking powder until mixed well.
- Pour in blueberries and fold in gently.
- Put in the oven and bake for 15-20 minutes or until a toothpick inserted in the center comes out clean.
Note: xanthan gum, rice flour, and tapioca flour can be found in the organic section of most grocery stores.
