Beet Greens Recipe

Ingredients for Beet Greens Recipe

  • 1 pound beet greens, washed and drained
  • 1 strip of thick cut bacon
  • 1/4 cup onion, chopped
  • 1 large garlic clove, minced
  • 3/4 cup of water
  • 1 tbsp granulated sugar
  • 1/4 teaspoon crushed red pepper flakes
  • 1/6 cup of cider vinegar

Instructions

  1. Remove thick stems from the greens and discard.
  2. Tear greens into smaller pieces, about the size of a matchbook.
  3. Cook the bacon in a frying pan until browned.
  4. Stir in the chopped onion and cook for about 5 minutes or until onions are soft.
  5. Add garlic and stir.
  6. Add water to skillet and scrape up any pieces of bacon or onion stuck to the bottom.
  7. Add sugar and red pepper and bring to a boil.
  8. Once the mixture reaches a boil, add the greens and stir to coat them.
  9. Simmer for 10 minutes.
  10. Remove from pot and toss with vinegar.
