Ingredients for Beet Cream Soup Recipe

  • 1 large beet
  • 2 1/2 cups milk
  • 1 tablespoon flour smoothed with milk
  • Salt
  • 1 tablespoon of oil

Instructions

  1. Chop beet very fine or grind it through a food chopper, taking care not to lose any of the juice.
  2. Add it to the milk in a dobule boiler.
  3. Steep for 15-20 minutes or longer after it reaches scalding temperature.
  4. Strain out the beet, pressing it well to extract all the flavor.
  5. Return the soup to the double boiler.
  6. Reheat and thicken with flour stirred smooth with a little cold milk.
  7. Add salt and one tablespoon of oil.
