Ingredients for Beer Soup (german Method) Recipe

  • 2 quarts of mild beer (it should not be bitter)
  • Thin lemon rind
  • A few cloves
  • 1 stick of cinnamon
  • Sugar to sweeten
  • 6 egg yolks
  • Half pint of cream

Instructions

  1. Simmer mild beer with the thin rind of a lemon, a few cloves, and a stick of cinnamon.
  2. Sweeten with sugar, and add it through a sieve, to the well-beaten egg yolks and half a pint of cream.
  3. While pouring into the tureen, stir into a froth with a wire whisk.
  4. The beer should be very hot, but not boiling, when stirred into the eggs.
  5. Serve hot with toast.
  6. Time, about half an hour to simmer.
  7. There will be sufficient of this for eight or ten persons.
