Ingredients for Beef Braised With Vegetables And Olives Recipe

  • 3½ pounds beef round, whole piece
  • ½ cup shortening
  • 3 tomatoes, chopped
  • 4 carrots, peeled, quartered
  • 2 turnips, peeled, quartered
  • 6 onions, peeled, quartered
  • 1 cup olives, pitted
  • 1½ quarts water
  • 1 tablespoon flour
  • Seasonings to taste

Instructions

  1. Brown the piece of beef in frying pan with the shortening.
  2. Remove beef from the pan.
  3. Place in a kettle.
  4. Put carrots, onions, and turnips in frying pan and cook slowly until light brown.
  5. Remove vegetables with a skimmer and put vegetables in the kettle with the beef.
  6. Add the flour to the fat and mix together until brown.
  7. Add the water and seasonings.
  8. Let boil for about 2 minutes.
  9. Strain through a strainer.
  10. Place gravy in the kettle and add the olives and tomatoes.
  11. Cover and let it cook slowly at 325 degrees for about 1 1/2 hours.
