Ingredients for Bean And Tomato Soup Recipe
- One quart of beans
- Half pound of chopped-fat salt pork
- 2 sliced onions
- Bay leaf
- 1 quart canned tomatoes
- 2 teaspoons granulated sugar
- 1 tablespoon flour
- 1 tablespoon butter
Instructions
- Soak beans for eight hours.
- Drain and soak in warm water for another hour.
- Drain again and put into a large pot with a gallon of cold water; bring to a boil slowly.
- Add salt pork, onions, and bay leaf.
- Simmer gently for four hours.
- Then press the soup through a sieve.
- Put the tomatoes and soup in the pot and sweeten with sugar.
- Boil for half an hour and strain the soup through a colander. Return to heat.
- Thicken it with a tablespoon of flour rubbed into the same quantity of butter.
- Return briefly to a boil, then serve.
