Ingredients for Bass (striped) With Caper Sauce
- 3 pounds striped bass, cut in 4 pieces
- ¼ cup vinegar
- 1 quart water
- 2 cups caper sauce
- (see p. 46)
- Salt to taste

Instructions
- Put striped bass in a baking pan with the salt, vinegar and water.
- Boil slowly for about 15 minutes.
- Remove striped bass from water.
- Place one piece of fish on each plate.
- Pour over each piece of fish some caper sauce.
