Ingredients for Barley Water Recipe 1
- 1/4 cup pearl barley
- 2 quarts cold water
- Salt

Instructions
- Rinse the barley and let it soak in cold water for at least one hour.
- Bring the water and barley to a boil.
- Slowly simmer until it is reduced to one pint of liquid.
- Strain off the broth.
- Season with salt, reheat, and serve plain or seasoned with a little cream.
- 1/4 cup raisins or diced figs may be cooked with the barley if desired, or a little lemon rind and sugar may be used in the broth.
