Instructions

  1. Peel and cut in small pieces three bananas; sprinkle with a teaspoon of lemon juice and half a cup of powdered sugar; allow it to stand half an hour in the ice box, then mash with a wooden spoon and break in the white of one egg, beating with a Dover egg beater until light and fluffy.
  2. Select a deep wide bowl for this purpose, as the mixture increases surprisingly, and when quite thick fold in a cup of whipped cream and two tablespoons of grated cocoanut; pile lightly in sherbet glasses, and serve very cold, with a tablespoon of iced fruit sauce poured over each portion.
  3. The sauce is easily prepared by slightly thickening the juice of any preferred fruit with a little arrowroot, then sweetening it to taste; a subacid fruit is the best for this purpose.
