Instructions

  1. Slice six large bananas, sprinkle with lemon juice and grated cocoanut and place directly on the ice to chill and ripen (for at least an hour).
  2. Mash them smooth with a wooden spoon, adding a scant cup of powdered sugar and the stiffly beaten whites of two eggs, which should be lightly folded in; now pour into the freezer, turning the crank for about four minutes, or until there is a slight resistance, when half a pint of whipped cream may be added.
  3. Freeze to the consistency of mush; serve in individual crimped paper cases lined with tiny Naple biscuits.
