Baked potatoes are all well and good, but for real flavor baked sweet potato recipes make a great change of pace.

What Color Is Your Sweet Potato?

Sweet potatoes are not only a nice change from plain old potatoes, but they are a fun way to add color to your dinner. The flesh of the sweet potato can be found in a variety of colors including white, yellow, orange, and purple. The white and orange sweet potatoes are the most common colors of this spectrum that you'll find in your local market. No matter what color your sweet potato happens to be, you can use it in any of the sweet potato recipes that you have.

Baked Sweet Potato Recipes

Sweet potatoes take a good bit longer to bake than regular potatoes, although the process is the same. You do not need to prick the skin or wrap them in foil, but I do suggest that you place them on a cookie sheet with a rack in it to catch the very sticky liquid that will seep from the sweet potatoes as they bake.

  • 1 sweet potato per guest

Instructions

  1. Preheat oven to 450 degrees.
  2. Wash each potato thoroughly.
  3. Place the potatoes on a rack on a cookie sheet.
  4. Bake for at least 45 minutes or until tender.
  5. Remove from the oven and let cool.
  6. Slice each potato.

At this point, your options for baked sweet potato recipes can range from serving them just with butter, topping them with butter and brown sugar, or making twice baked sweet potatoes.

Twice Baked Sweet Potato

This recipe serves six.

Ingredients

  • 6 sweet potatoes, washed
  • 1 8-ounce package of cream cheese at room temperature
  • 1/3 cup of brown sugar, firmly packed
  • ½ stick of butter
  • 1 tablespoon of vanilla extract
  • ½ teaspoon of salt
  • ¼ teaspoon of pepper
  • 1/3 cup of chopped pecans

Instructions

  1. Preheat oven to 450 degrees.
  2. Bake the sweet potatoes for 45 minutes or until tender.
  3. While the potatoes bake, mix cream cheese, brown sugar, butter, vanilla, salt, and pepper in a bowl.
  4. Taste for salt and pepper.
  5. Once the potatoes have been fully baked, remove from the oven and let cool.
  6. Slice each potato lengthwise.
  7. Using a large spoon, scoop out the flesh from the potatoes leaving a 1/4 inch of the flesh on the skin.
  8. Mix the removed potato meat with the cream cheese mixture.
  9. Add the pecans.
  10. Place the mixture back into the potatoes.
  11. Reduce the oven to 350 degrees.
  12. Bake the stuffed potatoes for 15 minutes.
  13. Serve hot.

Cajun Baked Sweet Potato Fries

Ingredients

  • 6 sweet potatoes washed and cut into French fries
  • 3 tablespoons of oil
  • 3 tablespoons of Cajun spice mix

Instructions

  1. Preheat oven to 425 degrees.
  2. Place the cut potatoes in a bowl.
  3. Toss with the oil.
  4. Add the Cajun spice and toss to coat.
  5. If you like, you can mix all the ingredients in a large plastic bag.
  6. Place the fries on a cookie sheet that has a sheet of parchment paper on it. You will need two cookie sheets or you can bake the potatoes in two batches.
  7. Bake for 30 minutes and then turn the fries over.
  8. Bake for another 30 minutes until crispy on the outside, tender on the inside.
  9. Serve with your favorite dipping sauce.
