Baked Shad Recipe 2

Instructions

  1. 1 shad weighing 4 lbs.
  2. 1/4 lbmushrooms
  3. 1/2 cup vegetable shortening
  4. 2 tablespoons chopped parsley
  5. 2 tablespoons chopped chives
  6. 1 cup breadcrumbs
  7. 1 egg
  8. Salt and white pepper
  9. Salt pork
  10. 1 cup cream
  11. 1 teaspoon cornstarch
  12. Clean, wipe and dry the shad.
  13. Melt vegetable shortening, add breadcrumbs, chopped mushrooms, parsley, chives, egg well beaten, salt and pepper.
  14. Stuff fish with this forcemeat, then lay it in a greased pan, put thin strips of salt pork over it and bake in hot oven for forty minutes.
  15. Lay the fish on a hot platter.
  16. Pour cream into baking pan, add cornstarch and stir till boiling.
  17. Serve with the fish.
