Ingredients for Asparagus Soup Recipe 3

• 3 cups white stock
• 1 can asparagus
• 2 cups cold water
• 1 slice onion
• ¼ cup butter
• ¼ cup flour
• 2 cups scalded milk
• Salt and pepper

Instructions

1. Drain and rinse asparagus.
2. Reserve tips and add stalks to cold water.
3. Boil five minutes. Drain and add stock and onion.
4. Boil for thirty minutes and rub through sieve.
5. Bind with butter and flour cooked together.
6. Add salt, pepper, milk, and tips.
