Ingredients for Asparagus Omelet Recipe
- 3 eggs
- 1 tablespoon cream
- 1 tablespoon melted butter
- 1/4 teaspoon salt
- A dash of white pepper or paprika
- 1/2 cup young asparagus tips

Instructions
- Beat the egg yolks very lightly; add the salt, pepper, and cream.
- Fold in stiffly beaten egg whites.
- Boil the butter in an omelet pan. Pour in the egg mixture.
- As soon as it begins to stiffen, slip the edges away from the pan or gently slide a knife under the center to allow the uncooked egg to reach the hot pan, and cook evenly.
- Fold in warm young asparagus tips that have been cooked until tender and seasoned with salt and pepper.
- Serve quickly.
