Ingredients for Asparagus Omelet Recipe

  • 3 eggs
  • 1 tablespoon cream
  • 1 tablespoon melted butter
  • 1/4 teaspoon salt
  • A dash of white pepper or paprika
  • 1/2 cup young asparagus tips

Instructions

  1. Beat the egg yolks very lightly; add the salt, pepper, and cream.
  2. Fold in stiffly beaten egg whites.
  3. Boil the butter in an omelet pan. Pour in the egg mixture.
  4. As soon as it begins to stiffen, slip the edges away from the pan or gently slide a knife under the center to allow the uncooked egg to reach the hot pan, and cook evenly.
  5. Fold in warm young asparagus tips that have been cooked until tender and seasoned with salt and pepper.
  6. Serve quickly.
