Ingredients for Apricot Omelet Recipe

  • 6 preserved apricots
  • 1/4 cup fruit juice.
  • 5 eggs
  • Pinch of salt
  • 1 tablespoon sugar
  • 2 tablespoons vegetable shortening

Instructions

  1. Dice apricots and heat in a frying pan with fruit juice.
  2. Beat eggs. Add the salt and sugar.
  3. Melt shortening in an omelet pan or frying pan. When hot, pour in eggs and stir over quick fire until they begin to thicken.
  4. Add the apricots, then quickly shape the egg mixture into an oval by folding the ends.
  5. Allow the omelet to turn a golden brown by putting it in the oven.
  6. Place it on a hot plate, dredge with sugar, and serve at once.
