Ingredients for Apricot Tarts Recipe

  • 2 cups flour
  • ½ cup vegetable shortening
  • 4 tablespoons sugar
  • ½ teaspoon salt
  • 1 egg
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking powder
  • Apricot jam or jelly
  • Whipped cream
  • Angelica
  • Preserved cherries

Instructions

  1. Rub vegetable shortening into flour, add salt, sugar, baking powder, break egg in and mix well with fork, then add vanilla.
  2. Roll out, cut with cutter and lie greased tartlet tins with the rounds.
  3. Line with paper and put in some rice or peas to keep pastry from rising; bake in hot oven twenty minutes.
  4. Remove rice and papers.
  5. When pastries are cold put in each one a spoonful of the jam or jelly.
  6. Fill with whipped cream and decorate with cherries and angelica.
  7. Sufficient for thirty tarts.
