Ingredients for Apricot Omelet Recipe
- 6 preserved apricots
- 1/4 cup fruit juice.
- 5 eggs
- Pinch of salt
- 1 tablespoon sugar
- 2 tablespoons vegetable shortening

Instructions
- Dice apricots and heat in a frying pan with fruit juice.
- Beat eggs. Add the salt and sugar.
- Melt shortening in an omelet pan or frying pan. When hot, pour in eggs and stir over quick fire until they begin to thicken.
- Add the apricots, then quickly shape the egg mixture into an oval by folding the ends.
- Allow the omelet to turn a golden brown by putting it in the oven.
- Place it on a hot plate, dredge with sugar, and serve at once.
