Ingredients for Apples In Pastry Recipe
- 2 pounds apples
- 1 pint cold water
- 2 pounds loaf sugar
- Dash of cinnamon
- Juice of a small lemon
- 1 teaspoon butter
- Pie pastry
- Custard
- 1 teaspoon red jelly
- 1 egg white

Instructions
- Peel and core apples.
- Put them into the water with loaf sugar, a little cinnamon, lemon juice, and a little butter.
- Boil to a pulp.
- Grease a pie dish and line it with a good pastry about half an inch thick.
- Place the apple pulp inside, pour custard over it, and ornament with alternate dots of red jelly and white of egg.
- Bake it in a hot oven for 20 minutes.
- Lift the pastry out of the dish before serving.
- Sufficient for five persons.
