Ingredients for Apple Snow Recipe 1

• 6 tart apples, pared and sliced
• 3/4 cup water
• 2/3 cup sugar
• 1 egg white (per 1 1/2 cups pulp)

Instructions

1. Cook apples with water and sugar until tender.
2. Mash through a fine strainer, and let cool.
3. Put 1 1/2 cups of the apple pulp into a bowl with the white of 1 egg and beat with a whisk or Dover beater until white and fluffy.
4. Serve plain or with a teaspoon red jelly on the top of each dish.
